Choux Pastry Masterclass- 3 hrs. (11am to 2pm)

One of the most versatile pastries in French patisserie . This class will show you how to make a
perfect smooth, glossy choux pastry dough. Then the fun begins, we will teach you a variety of
piping techniques including Profiteroles , Eclairs and Paris- Brest . We will then inspire you with some delicious fillings to create some fantastic patisserie to take home and enjoy.

Sample Menu;

White Chocolate and Raspberry Eclairs – Learn how to make refined eclairs- we
make a classic creme patisserie and raspberry puree filling, glaze the eclairs with white
chocolate and finally top with fresh raspberries

Tiramisu Profiteroles aux Craquelin– These choux buns are incredible. First we make classic choux
bun dough and pipe it onto baking sheets, then we top it with an enriched pastry disc – to make a
‘craquelin’ top, bake and allow to cool. We then fill the buns with an indulgent mascarpone and
coffee cream.We serve this with a hot chocolate and amaretto sauce- delicious!

Paris -Brest This round pastry, in the form of a wheel, was named after the bicycle race that runs from Paris to Brest, in Brittany. Filled with a praline creme patissiere and caramelized hazelnuts-it’s a classic for a reason.

Parking? We have ample parking at the front of the bakery.

Where is the entrance? We are a working bakery so please stay in your cars on arrival. We will come out and collect you 10 minutes before the course starts.

Aprons? We will provide you a Firehouse Bakery Cookery School apron for the day

Taking food home? Yes, everything you cook you will take home to impress your friends and family.

For almost all of our classes, we will be able to adjust dishes to accommodate dietary
