This is a full day hands on bread making experience.

We believe that the secret to great bread is time and in this class, we will be focusing on building flavour through time through the use of prefermented dough, sponges and poolish and how temperature can be used to manipulate dough. During this class you will make 3 different yeasted doughs.
This class will look at how time and temperature affect the flavour and texture of your baking.
This class is the perfect introduction to bread making and yet at the same time, we ensure you leave with fantastic loaves that even the most experienced baker would be proud of.

What to expect; (recipes subject to change)

Malted granary Family Loaf – A bread which teaches you the foundations of bread making as well as showing how to extend the fermentation process to create a loaf that is filled with flavour- it’s versatile and will be your go-to loaf.

Overnight Sweet Dough– This is the same dough we use to make our famous cinnamon buns and
we show you how slowing the process down produces incredible flavour – these are our best sellers for a reason.

Classic French Baguette– surely bread doesn’t get any better? In this recipe Patrick will show you how to get most flavour possible from your dough while sharing his tips and tricks to produce amazing baguettes at home.

And to finish we will have something sweet for you in the form of a short patisserie demo.

The class includes tea and coffee on arrival, as well as refreshments throughout the day and will conclude with a sourdough pizza lunch at our neighbours Wicklow Wolf brewery.

The class will also include a tour of our bakery which will give you a behind the scenes look and insight into the daily workings of a modern Irish bakery.

Where: Unit 39 Business and Enterprise centre, Newtownmountkennedy, Co. Wicklow

When: 10am – 4pm

 

Information about your day:

Parking? We have ample parking at the front of the bakery.

Where is the entrance? We are a working bakery so please stay in your cars on arrival. We will come out and collect you 5 minutes before the course starts.

Will lunch be provided? Each full day class includes tea and coffee on arrival, as well as refreshments throughout the day and will conclude with a sourdough pizza lunch at our neighbours Wicklow Wolf brewery.

We promise you won’t leave hungry

Aprons? We will provide you a Firehouse Bakery Cookery School apron for the day

Taking food home? Yes, everything you cook you will take home to impress your friends and family. Expect to leave with as much baked goods as you can carry. We recommend bringing some bags, boxes, or tubber ware to get your baked goods home safely
